Strawberry Basil Balsamic Shrub with Gin

Ingredients:

For the strawberry shrub:

  • 1 bunch very ripe strawberries, hulled and sliced
  • Sugar (enough to coat the strawberries)
  • Strawberry Balsamic Vinegar from The Tree and Vine

For the basil syrup:

  • A handful of fresh basil leaves
  • 1 cup sugar
  • 1 cup boiling water

For each cocktail:

  • Gin
  • Sparkling water

Directions:

  1. Sprinkle sliced strawberries with sugar. Cover and refrigerate overnight.
  2. Strain the syrup out, squeezing fruit.
  3. Mix with equal parts Strawberry Balsamic Vinegar in a jar. 
  4. Store the jar in the refrigerator for at least 24 hours. Shake once or twice a day. The shrub will continue to develop flavor over several days.
  5. Make a simple basil syrup using 1 cup sugar,1 cup boiling water, and the fresh basil.
  6. Cool the syrup.
  7. In a tall glass, add equal parts Gin and Strawberry Balsamic Shrub, plus half of the basil syrup.
  8. Top with a little sparkling water and enjoy!
