Ingredients:
For the strawberry shrub:
- 1 bunch very ripe strawberries, hulled and sliced
- Sugar (enough to coat the strawberries)
- Strawberry Balsamic Vinegar from The Tree and Vine
For the basil syrup:
- A handful of fresh basil leaves
- 1 cup sugar
- 1 cup boiling water
For each cocktail:
- Gin
- Sparkling water
Directions:
- Sprinkle sliced strawberries with sugar. Cover and refrigerate overnight.
- Strain the syrup out, squeezing fruit.
- Mix with equal parts Strawberry Balsamic Vinegar in a jar.
- Store the jar in the refrigerator for at least 24 hours. Shake once or twice a day. The shrub will continue to develop flavor over several days.
- Make a simple basil syrup using 1 cup sugar,1 cup boiling water, and the fresh basil.
- Cool the syrup.
- In a tall glass, add equal parts Gin and Strawberry Balsamic Shrub, plus half of the basil syrup.
- Top with a little sparkling water and enjoy!
